About
Hioki is the second whisky distillery from Komasa Jyozo, the company behind Kanosuke. Located in the Hioki area of Kagoshima, it focuses on pot still whisky inspired by Irish and bourbon traditions but using shochu making techniques. The whisky uses both malted and unmalted barley, matured in American white oak and bourbon barrels.
