The fifth entry in Saburomaru's tarot themed series, The Hierophant features heavily peated spirit from 2021 matured with a focus on ale yeast fermentation. Limited to 12,600 bottles at 15,400 yen, it continues Wakatsuru's mission to produce "the ultimate peat" from their small Toyama distillery using the innovative ZEMON cast metal pot still.

Tasting Notes

Nose

Fresh herbal notes and resinous pine mingle with fruity sweetness. The heavy peat brings a thick, aromatic smoke alongside hints of iodine and dried leaves.

Palate

Bold and smoky with a thick mouthfeel. The ale yeast character adds bready, slightly funky depth beneath layers of peat, earthy malt, and dark fruit. Surprisingly complex for a 3 year old spirit.

Finish

Long and ashy with lingering herbal bitterness and a resinous, slightly medicinal quality. The smoke stays with you.
